CANADA ZERO WASTE PROJECT

An initiative to reduce waste in Canada.

You’re probably here because you have now received our special sustainability kit.

We are passionate about sustainability and taking care of not just the environment but our people. We have long called Diplomático the heart of rum, but we are so proud to call ourselves a rum with heart. We developed our global Distilled Consciously program to reduce the impact of our rum-making process and bring about meaningful change by:

  • Streamlining our processes: We are making our rum-making processes cleaner and more efficient to waste less, save more energy and reduce emissions. In the last few years, we have been able to reduce the amount of water used in our production by half.
  • Protecting our environment: We are committed to protecting and preserving our land, environment and the natural habitats with reforestation and beach cleanup programs.
  • Caring for our people: From greater education, empowerment and equality, to increasing the health and happiness of our team and helping our local communities.

And, of course, let’s not forget food waste.

Zero Waste Cocktails

We hope to generate a positive impact by involving you – consumers and the public. Food holds great power in terms of social impact, yet about a third of all food produced for human consumption is lost. We are working with partners, including NGOs, around the world to encourage everyone to join us in this initiative to create less waste and generate awareness on this issue. Here in Canada we are proud to be working with Second Harvest, our country’s largest food rescue organization on their latest campaign, Donate the Difference. 

As part of that campaign, we developed some delicious zero waste cocktails that maximize the use of the ingredients – whether it’s making use of those overripe berries in your fridge or using the entire citrus fruit – peels and all. Check out those recipes below and please enjoy them responsibly! 

Canadian Berry Smash

Ingredients: 2oz Diplomático Reserva Exclusiva ¾ oz fresh lime juice ¾ oz Cassis liqueur (or any berry liqueur you may have at home) Handful of berries (you can use any ripe berries you have) Berry ice (we like to use Cassis berries in large ice cubes, but use what you have on hand at home) Method: Freeze your berry ice cubes in advance. Pour the first four ingredients in a cocktail shaker. Add the berry ice. Shake for several minutes and pour mixture into a rocks glass. Garnish with fresh lime. Makes one zero waste cocktail.

Juancho Old-Fashioned cocktail

This cocktail uses Oleo Saccharum, which is a bartender trick using older citrus to make a key ingredient in cocktails. It refers to extracting the oil from citrus peels by using sugar. Peel an orange and place the peels in a bowl. Sprinkle a few ounces of granulated sugar on top, muddle lightly into the peels. After a few hours, the sugar will have extracted the oils from the peels, leaving you with a slightly messy yet delicious syrup. Juice the rest of the orange and place to the side. Into a cocktail mixing glass, add: 2 oz. Diplomático Reserva Exclusiva 2 dashes chocolate bitters 3 dashes aromatic bitters ¼ oz. Orange Oleo Saccharum Stir the ingredients over ice. Strain and pour into rocks glass over ice. Float a small amount of fresh orange juice on the top of the cocktail for extra delicious flavour. Garnish with orange peel. Makes one zero-waste cocktail.

Bolivar cocktail

This daiquiri-style cocktail uses Oleo Saccharum, which is a bartender trick using older citrus to make a key ingredient in cocktails. It refers to extracting the oil from citrus peels by using sugar. Peel a lime and place the peels in a bowl along with a handful of mint leaves. Sprinkle a few ounces of granulated sugar on top, muddle it lightly into the peels and mint. After a few hours, the sugar will have extracted the oils from the peels, leaving you with a slightly messy yet delicious syrup. Juice the remainder of the lime. In a cocktail shaker with ice, add: 2 oz. Diplomático Mantuano 1 oz. Lime and mint Oleo Saccharum 1 oz. Fresh lime juice Shake and strain into a coupe glass. Optional: garnish with lime peel. Makes one zero-waste cocktail.

Easy ways to reduce food waste at home

Cutting down on food waste doesn’t have to be complicated and, if we all do our part, it can lead to significant change. Here are some other ideas on simple ways to maximize your food and limit your waste. 

  1. Make a shopping list: Take inventory of what you have at home before you hit the grocery store. It’ll help you avoid purchasing unnecessary foods
  2. Think twice before tossing: Just because the greens are a little wilted doesn’t mean they have to be tossed, veggies and scraps can make a great soup stock and stale bread works wonderfully as breadcrumbs, croutons or toast!
  3. Store food correctly: This will greatly extend the life of your food items and help reduce waste. For example, by washing berries in a solution of vinegar and water, you can extend their shelf-life by days.
  4. The freezer is your friend: Most foods freeze well and freezing fruits and vegetables when they are in season locally can reduce the need for buying them when they are out of season and come from far away. Adding some berries to your ice cubes is another fun and flavourful way to jazz up your next cocktail.
  5. Compost the scraps: Reduce what goes into the garbage bin and create some great fertilizer for your plants at the same time! Scraps like stems, peels, and unusable bits of food, as well as coffee grounds and tea leaves make a great addition to a compost heap.
  6. Experiment with excess fruits and vegetables: If you’ve got a surplus of a particular item, consider ways to extend its life through either dehydration or pickling. These are cost effective and fun ways to prolong your enjoyment of seasonal foods.
